Peanut Butter Apple Sandwiches with Granola

Ingredients
  

  • 2 large Honeycrisp or Granny Smith apples
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup honey -oat granola
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions
 

  • Core the apples using an apple corer or a small round biscuit cutter.
  • Slice the apples horizontally into 1/2-inch thick rings to create uniform rounds.
  • Brush both sides of the apple rings with lemon juice to prevent enzymatic browning.
  • Lay half of the apple rings flat on a work surface and spread 1 tablespoon of peanut butter onto each.
  • Sprinkle 1 tablespoon of granola over the peanut butter on each slice.
  • Dust the granola with a pinch of ground cinnamon.
  • Place the remaining apple rings on top of the granola-covered slices to form sandwiches.
  • Serve immediately for optimal texture.
