  • 1 cup peanut butter Creamy or crunchy based on preference.
  • 1 cup brown sugar Can be substituted with extra granulated sugar and a little molasses.
  • 1/2 cup granulated sugar
  • 1 large egg Can be substituted with 1 tablespoon flaxseed meal + 2.5 tablespoons water.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chocolate chips Can substitute with dried fruit for a healthier option.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar, and mix until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • Stir in the baking soda and salt.
  • Gradually mix in the rolled oats and chocolate chips until evenly distributed.

Baking

  • Drop spoonfuls of dough onto a prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to a week. Freeze in a freezer-safe bag for up to three months.
