- 1 cup crisp dill pickles diced
- 2 ripe Roma tomatoes diced
- 1/2 red onion finely chopped
- 1/4 cup fresh cilantro chopped
- 1 jalapeño or serrano pepper finely diced (optional for spice)
- 1 tablespoon fresh lime juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cumin optional
Drain and dice the pickles into small, uniform cubes.
Dice fresh Roma tomatoes and finely chop the red onion.
Mince the jalapeño or serrano pepper, removing seeds for less heat.
Chop the fresh cilantro leaves, discarding tough stems.
In a large mixing bowl, gently combine all the chopped ingredients.
Add lime juice, salt, and cumin (if using). Stir lightly to mix evenly.
Let the mixture sit for 5-10 minutes to blend flavors.
Serve immediately as a topping for tacos, sandwiches, or grilled meats.
For a milder version, omit the jalapeño or use a mild pepper.
Store in an airtight container in the fridge for up to 3 days.
