Ingredients
  

  • 1 cup crisp dill pickles diced
  • 2 ripe Roma tomatoes diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño or serrano pepper finely diced (optional for spice)
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cumin optional

Instructions
 

  • Drain and dice the pickles into small, uniform cubes.
  • Dice fresh Roma tomatoes and finely chop the red onion.
  • Mince the jalapeño or serrano pepper, removing seeds for less heat.
  • Chop the fresh cilantro leaves, discarding tough stems.
  • In a large mixing bowl, gently combine all the chopped ingredients.
  • Add lime juice, salt, and cumin (if using). Stir lightly to mix evenly.
  • Let the mixture sit for 5-10 minutes to blend flavors.
  • Serve immediately as a topping for tacos, sandwiches, or grilled meats.

Notes

For a milder version, omit the jalapeño or use a mild pepper.
Store in an airtight container in the fridge for up to 3 days.
For extra crunch, use fresh, naturally fermented pickles with no additives.
