Ingredients
  

For the crust

  • 1 package graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the creamy layers

  • 1 package instant vanilla pudding
  • 2 cups cold milk
  • 1 container whipped topping

For assembly

  • 1 can crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup sweetened shredded coconut for garnish

Preparation

  • In a bowl, mix graham cracker crumbs and melted butter until crumbly. Press the mixture into the bottom of a 9×13 inch baking dish.

Creamy Layer

  • In another bowl, whisk together the instant vanilla pudding and cold milk until thickened. Fold in the whipped topping.
  • Spread a layer of the pudding mixture over the graham cracker crust.

Assembly

  • Add the crushed pineapple in an even layer on top of the pudding.
  • Sprinkle shredded coconut over the pineapple layer.
  • Add another layer of the pudding mixture, spreading it evenly across the top.

Setting

  • Refrigerate the dessert for at least 4 hours or until set. Before serving, sprinkle with sweetened shredded coconut for garnish.

Notes

This dessert is best enjoyed chilled. Serve it straight from the fridge on hot days or at summer parties. You can also add extra toppings like fresh pineapple, cherries, or even a drizzle of chocolate sauce for indulgence. Make sure the graham cracker crust is firmly packed to avoid crumbling.
