Ingredients
  

Main Ingredients

  • 1 cup crushed pineapple, drained Use fresh if possible for vibrant flavor.
  • 1 cup coconut cream
  • 2 cups finely chopped white chocolate Finely chopped to melt quickly.
  • 1/2 cup shredded coconut Plus additional for rolling.
  • 1/4 cup rum Flavored rum can be used for variation.
  • 1/4 cup powdered sugar Dust hands with it while rolling to prevent sticking.

Preparation

  • In a mixing bowl, combine the crushed pineapple, coconut cream, and rum.
  • Melt the white chocolate in a microwave or double boiler.
  • Stir the melted chocolate into the pineapple mixture until smooth.
  • Add shredded coconut and powdered sugar, mixing well.
  • Chill the mixture in the fridge for about 1 hour until firm.
  • Once chilled, scoop out small portions and roll them into balls.
  • Roll the truffles in additional shredded coconut.
  • Place the truffles on a baking sheet and refrigerate until set.

Notes

These truffles pair well with fresh fruit or a light dessert spread. Store in an airtight container in the fridge. They last about a week and can also be frozen for up to a month.
