Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Use fresh for best results.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder Adjust for spice preference.
  • Salt and pepper to taste

For the Tacos

  • 1 cup fresh pineapple, diced Fresh is best, canned may go mushy.
  • 8 pieces small corn or flour tortillas Warming is recommended before assembling.
  • Fresh cilantro, chopped (for garnish) Optional for decoration.
  • Lime wedges (for serving) Enhances flavor.

Preparation

  • Preheat the grill to medium-high heat.
  • In a bowl, combine olive oil, garlic powder, chili powder, salt, and pepper.
  • Coat the chicken breasts with the spice mixture and grill for about 6-8 minutes on each side or until fully cooked.
  • Remove from the grill and let rest for a few minutes before slicing.

Grilling

  • While the chicken is resting, grill the diced pineapple for about 2-3 minutes until caramelized.
  • Warm the tortillas on the grill for about 30 seconds on each side.

Assembly

  • Assemble the tacos by placing sliced chicken and grilled pineapple onto the tortillas.
  • Garnish with fresh cilantro and serve with lime wedges.

Notes

Leftovers should be stored in separate airtight containers for up to 2-3 days. For freezing, store components separately; chicken and pineapple can be frozen for up to a month. Thaw and reheat before serving.
