Ingredients
  

For the Chicken

  • 2 pieces chicken breasts, diced
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For the Tacos

  • 8 pieces small corn tortillas
  • 1/4 cup fresh cilantro, chopped
  • for serving Lime wedges For additional flavor

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • In a bowl, combine diced chicken, olive oil, chili powder, garlic powder, salt, and pepper.

Cooking

  • Grill the chicken for about 6-8 minutes, until fully cooked, turning occasionally.
  • Remove the chicken from the grill and let it rest.
  • Grill the tortillas for about 1 minute on each side until warm and slightly charred.

Assembly

  • Assemble the tacos by placing grilled chicken and pineapple on each tortilla.
  • Top with chopped cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container in the fridge. Keep tortillas separate to prevent them from getting soggy. Enjoy cold or reheat briefly in a skillet.
