  • 8 oz cream cheese (softened) Ensure cream cheese is softened for easy mixing.
  • 1 cup powdered sugar Can substitute with almond flour for a different twist.
  • 1 cup shredded coconut Plus extra for coating the balls.
  • 1/2 cup chopped nuts (optional; walnuts or pecans) Add for a bit of crunch.

Preparation

  • Drain the canned pineapple chunks thoroughly and pat them dry with paper towels to remove excess moisture.
  • In a large mixing bowl, combine softened cream cheese and powdered sugar until smooth and fluffy.
  • Gently fold in the drained pineapple chunks into the cream cheese mixture until well combined.
  • Using your hands, scoop out portions of the mixture and roll them into golf ball-sized balls.
  • Roll each ball in shredded coconut until fully covered.
  • Place your finished Pineapple Christmas Balls on a serving platter and refrigerate for at least one hour.
  • Serve chilled, optionally drizzling with extra coconut or nuts before presenting.

Notes

To keep your Pineapple Christmas Balls fresh, store them in an airtight container in the fridge. They can last up to a week. If you wish to freeze them, place them in a freezer-safe container, separating layers with parchment paper.
