Ingredients
  

For the crust

  • 1 cup crushed graham crackers
  • 1/2 cup melted butter Unsalted is recommended for better flavor.

For the filling

  • 1 package (3.4 oz) pistachio pudding mix
  • 2 cups milk Regular or almond milk can be used.
  • 1 cup whipped topping Cool Whip or similar product works best.

For garnish

  • to taste Chopped pistachios For a decorative finish.

Preparation

  • In a medium bowl, mix crushed graham crackers with melted butter until well combined.
  • Press the mixture into the bottom of a greased 9x9 inch pan to form the crust.
  • In another bowl, whisk together the pistachio pudding mix and milk until thickened.
  • Fold in the whipped topping until smooth.
  • Pour the pudding mixture over the crust and spread evenly.
  • Refrigerate for at least 2 hours until set.
  • Before serving, garnish with chopped pistachios.

Notes

Store the cookie bars in an airtight container in the fridge; they stay good for 3 to 5 days. For freezing, wrap portions tightly and can be enjoyed directly from the freezer or after thawing.
