For the Sauce

  • 1 cup shelled pistachios Use fresh for the best flavor.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1/2 cup grated Parmesan cheese Use plant-based cheese for a dairy-free option.
  • 1/2 cup olive oil Add more if sauce is too thick.
  • 1 whole Juice of 1 lemon
  • Salt and pepper to taste

  • Cooked pasta of choice Any pasta works well!
  • Fresh herbs (basil or parsley) for garnish Add a pop of color and freshness.

Preparation

  • In a food processor, combine the pistachios, garlic, and Parmesan cheese. Blend until finely chopped.
  • Gradually add the olive oil and lemon juice while blending, until the mixture is smooth and creamy.
  • Season with salt and pepper to taste.
  • Toss the pistachio sauce with the cooked pasta until evenly coated.
  • Serve warm, garnished with fresh herbs.

Notes

This sauce pairs beautifully with a fresh side salad or crispy garlic bread. Storage: Store leftovers in an airtight container in the fridge and consume within a couple of days. To freeze, pour into a freezer-safe container and thaw overnight before reheating.
