Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond butter or peanut butter Substitute for a nut-free option
  • 1/2 teaspoon vanilla extract

Optional Ingredients

  • 1/4 cup dark chocolate chips Optional for added taste

Preparation

  • Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  • In a large bowl, mix together the almond flour, cocoa powder, protein powder, and salt.
  • In another bowl, combine the honey (or maple syrup), applesauce, almond butter, and vanilla extract.

Mixing and Baking

  • Add the wet ingredients to the dry ingredients and mix until just combined. If using, fold in the chocolate chips.
  • Scoop the batter into the mini muffin tin, filling each cup about 3/4 full.
  • Bake for 12-15 minutes, or until a toothpick comes out clean.
  • Allow to cool before enjoying.

Notes

Store in an airtight container for up to a week. For longer storage, freeze for about three months. Let them thaw before enjoying.
