Protein Twix Bars

Protein Twix Bars are a delightful, easy-to-make snack that combines a rich shortbread layer with creamy nut butter caramel, all coated in chocolate. Perfect for busy days or an indulgent after-school treat!

Ingredients
  

Shortbread Layer

  • 2 cups Almond Flour
  • 0.5 cups Vanilla Protein Powder or Oat Flour
  • 0.25 cup Pure Maple Syrup
  • 0.25 cup Coconut Oil, Melted

Caramel Layer

  • 0.666 cup Creamy Peanut Butter or Cashew Butter
  • 0.33 cup Pure Maple Syrup
  • 2 Tbsp Coconut Oil, Melted
  • 2 scoops Collagen
  • 1 tsp Pure Vanilla Extract

Chocolate Coating

  • 2 cups Dark Chocolate
  • 2 tsp Coconut Oil

Instructions
 

Preparation

  • Combine the shortbread ingredients together, then press down into an 8x8 dish lined with parchment paper.
  • Place in the freezer while you make the caramel layer.

Making the Caramel Layer

  • Mix together nut butter, syrup, vanilla, coconut oil, and collagen until smooth.
  • Pour this delicious mixture over the shortbread layer and freeze for 1 hour or more.

Coating with Chocolate

  • Melt the chocolate and coconut oil together.
  • Slice the bars, and dip them in chocolate, letting any excess drip off.
  • Place them on parchment paper and sprinkle with flaky sea salt if desired.
  • Refrigerate for 10 minutes to let the chocolate harden.

Notes

Store bars in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage. Wrap each bar individually to prevent sticking.
