  • 8 oz pasta of your choice
  • 1 cup pumpkin puree
  • 4 strips bacon, chopped Use thick-cut bacon for extra flavor
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream For a lighter version, substitute with half-and-half
  • 1/2 tsp nutmeg Adjust according to taste
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper For seasoning
  • for garnish Fresh parsley

Instructions
 

Cooking the Pasta

  • Cook the pasta according to package instructions. Drain and set aside.

Preparing the Sauce

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pan.
  • Add the sliced onion to the skillet and cook until caramelized, about 15 minutes. Add minced garlic and cook for another minute.
  • Stir in the pumpkin puree, heavy cream, salt, pepper, and nutmeg. Simmer for 5 minutes until heated through.

Combining Ingredients

  • Add the cooked pasta and crispy bacon to the sauce. Toss to combine and warm through.
  • Stir in the grated Parmesan cheese and adjust seasonings as necessary.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

This creamy pasta pairs beautifully with a side salad or garlic bread. Store leftovers in an airtight container for 3-4 days in the fridge or freeze in portions for up to two months.
