Ingredients
  

Wet Ingredients

  • 1 cup melted butter Use unsalted butter for a balanced flavor.
  • 1 cup pumpkin puree Fresh pumpkin puree can enhance flavor.
  • 1 cup brown sugar Light or dark brown sugar can be used.
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour Can be substituted with whole wheat flour for a healthier option.
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Add a pinch of ginger or cloves for extra spices if desired.
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup dark chocolate chips For a sweeter treat, use milk chocolate chips instead.

Instructions
 

Preparation

  • In a pot on the stove, melt the butter over low heat. Remove from heat and stir in the pumpkin puree, brown sugar, and granulated sugar.
  • Beat in the eggs and vanilla until well combined.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the dark chocolate chips.

Baking

  • Pour the batter into a prepared baking dish and spread evenly.
  • Bake at 350°F (175°C) for 25-30 minutes or until a toothpick comes out clean.
  • Let cool before cutting into bars.

Notes

These bars are great on their own or served with ice cream. Store in an airtight container in the fridge for up to a week, or freeze for up to three months.
