  • 2 cloves garlic, minced Fresh garlic is recommended.
  • 1 tsp olive oil For sautéing the onion and garlic.
  • Salt and pepper to taste Adjust according to preference.
  • Parmesan cheese (optional) For topping if desired.

Cooking Steps

  • Cook the pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  • Stir in the pumpkin puree and heavy cream, mixing until well combined.
  • Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Serve warm, topped with Parmesan cheese and fresh herbs.

Notes

Pairs well with side salad or garlic bread. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat gently with added cream or water.
