Ingredients
  

  • 1 box (3.4 oz) instant vanilla pudding mix
  • cups cold milk
  • 1 cup pumpkin purée (not pie filling)
  • ½ tsp pumpkin pie spice (or cinnamon/nutmeg)
  • ½ tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup whipped topping (like Cool Whip)
  • 20 chocolate sandwich cookies, crushed
  • candy pumpkins or gummy worms
  • green frosting or icing
  • optional chocolate sprinkles or crushed pretzels
  • 6–8 small clear cups (8 oz)

Instructions
 

  • In a medium bowl, whisk together the pudding mix and cold milk until thickened, about 2 minutes. In a separate bowl, beat the cream cheese until smooth. Add pumpkin purée, spice, and vanilla, and mix until creamy.
  • Fold the pudding into the pumpkin mixture until fully blended. Gently fold in whipped topping until light and fluffy.
  • Crush cookies into fine crumbs using a food processor or by hand in a zip-top bag.
  • Spoon 2 tablespoons of cookie crumbs into each cup. Add a generous layer of pudding mixture, then top with more cookie crumbs to resemble soil.
  • Decorate with candy pumpkins, gummy worms, and green icing vines. Optionally sprinkle with chocolate sprinkles or crushed pretzels for texture.
  • Chill in the refrigerator for at least 30 minutes before serving. Enjoy!

Notes

Decorate just before serving for best texture and appearance. Use gingersnaps instead of chocolate cookies for a spiced twist, or drizzle caramel between layers for added sweetness. Assemble in a trifle dish for a large-format version.
