Donut Batter

  • 1 box Spice Cake Mix
  • 2 large Eggs
  • 1/4 cup Vegetable Oil
  • 15 oz Pumpkin (puree, not pumpkin pie mix)
  • 2/3 cup White or Brown sugar
  • 2 tbsp Cinnamon (or substitute pumpkin pie spice)
  • 1/4 cup Butter (melted)

Topping

  • 2 tbsp Cinnamon sugar mixture Mix cinnamon and sugar to taste

Instructions

Preparation

  • In a bowl, whisk together the pumpkin, eggs, and oil until combined.
  • Stir in the spice cake mix using a spatula or wooden spoon until well mixed.
  • Preheat your donut maker.
  • Pour the donut batter into a gallon-size ziplock bag and snip off a corner to create a piping bag.

Cooking

  • Spray the donut maker with nonstick spray and pipe the batter into each well, filling halfway.
  • Close the donut maker and cook for about 5 minutes.
  • Remove the donuts and cool them on a wire rack.
  • Continue with the next batch until you have about 36 mini donuts.

Topping

  • In a small bowl, melt the butter.
  • Dip the top of each cooled donut quickly in the melted butter, then into the cinnamon sugar.
  • Enjoy the donuts once they have cooled completely.

Notes

Use pure pumpkin puree for the best flavor. Clean the donut maker between batches for the best results if needed. Let the donuts cool completely before dipping them in butter and sugar.
