Puppy Chow Chocolate Truffles

Ingredients
  

  • 3 cups Rice Chex cereal, finely crushed
  • 1 cup semi -sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon sal t
  • 1 cup powdered sugar, for coating

Instructions
 

  • Place rice cereal in a sealed bag and crush with a rolling pin until fine crumbs are formed.
  • In a medium microwave-safe bowl, combine chocolate chips, peanut butter, and butter.
  • Heat in 30-second intervals, stirring between each, until the mixture is completely smooth.
  • Stir in vanilla extract and salt.
  • Fold in the crushed cereal crumbs until fully incorporated.
  • Refrigerate the mixture for 60 minutes until firm enough to handle.
  • Scoop 1-tablespoon portions and roll into 1-inch balls.
  • Place powdered sugar in a shallow bowl and roll each ball until heavily coated.
  • Store in an airtight container in the refrigerator.
