Ingredients
  

Raspberry Syrup (makes enough for 4 servings):

  • 2 cups fresh raspberries or frozen
  • 1/2 cup sugar or substitute honey, monk fruit sweetener, or stevia
  • 1/4 cup water
  • 1 tbsp lemon juice

For Each Mocktail:

  • 3 tbsp raspberry syrup
  • Juice of 1 lime approx. 2 tbsp
  • 8-10 mint leaves
  • 1 cup sparkling water
  • Ice cubes
  • Fresh raspberries for garnish
  • Lime slices for garnish
  • Mint sprig optional garnish

Instructions
 

Make Raspberry Syrup:

  • In a saucepan, combine raspberries, sugar, water, and lemon juice. Simmer over medium heat for about 10 minutes until berries break down and mixture thickens slightly.

Strain:

  • Pour through a fine mesh strainer, pressing with a spoon to extract all juice. Optional: strain again using cheesecloth for a seed-free syrup. Refrigerate for at least 30 minutes to cool.

Muddle Mint:

  • In a tall glass, add mint leaves and gently muddle with a wooden spoon to release flavor without tearing.

Assemble the Drink:

  • Add ice to glass. Pour in 3 tbsp raspberry syrup and fresh lime juice. Top with sparkling water and stir gently.

Garnish and Serve:

  • Add fresh raspberries and a lime slice to the rim. Optional: add a mint sprig for extra flair. Serve immediately.
