Ingredients
  

For the mascarpone mixture

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar Adjust to taste for sweetness
  • 1 teaspoon vanilla extract

For the assembly

  • 2 cups fresh raspberries Can use thawed frozen raspberries if needed
  • 2 cups brewed coffee, cooled Use flavored coffee for added taste
  • 24 pieces ladyfingers
  • Cocoa powder for dusting Add a sprinkle of cinnamon for variation

Instructions
 

Preparation

  • In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  • Gently fold in the mascarpone cheese until combined.
  • Dip each ladyfinger briefly in the cooled coffee, then layer half of them in the bottom of a serving dish.
  • Spread half of the mascarpone mixture on top of the ladyfingers.
  • Layer half of the raspberries over the mascarpone.
  • Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  • Cover and refrigerate for at least 4 hours or overnight.

Serving

  • Before serving, dust the top with cocoa powder and additional raspberries.

Notes

This dessert is best enjoyed within 2-3 days. Store leftovers in an airtight container in the fridge. Freezing is not recommended due to texture changes.
