  • 3 tablespoons maple syrup pure maple syrup for best flavor
  • 1 tablespoon olive oil neutral flavor, helps with caramelization

  • 1/4 teaspoon black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and easy cleanup.
  • Wash and peel the sweet potatoes, then cut them into evenly sized chunks or rounds for uniform roasting.
  • Place the sweet potato pieces in a mixing bowl. Drizzle with olive oil and sprinkle with salt and black pepper.
  • Toss gently to coat each piece evenly with the oil and seasonings, ensuring all surfaces are well covered.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not crowded and have space between them for even roasting.

Roasting

  • Roast in the oven for about 25-30 minutes, flipping halfway through, until the sweet potatoes are golden on the edges and tender when pierced with a fork.
  • Remove the sweet potatoes from the oven and brush them generously with maple syrup, coating each piece evenly for a glossy, caramelized glaze.
  • Return the sweet potatoes to the oven and roast for an additional 5-7 minutes, allowing the maple syrup to caramelize and form a sticky, flavorful coating.
  • Once baked, let the sweet potatoes rest for a few minutes; the glaze will thicken slightly and become irresistibly sticky and shiny.
  • Transfer to a serving dish and enjoy the warm, tender sweet potatoes with their sweet, caramelized glaze and slightly crispy edges.

Notes

To keep leftovers fresh, store them in an airtight container in the fridge for 3-5 days. For freezing, spread cooled sweet potatoes on a baking sheet and freeze for 1-2 hours before transferring to a container.
