  • 2 large sweet potatoes Washed, peeled, and sliced into 1/2-inch rounds.
  • 2 tablespoons olive oil or melted butter Use to drizzle on the sweet potatoes.
  • 2 tablespoons honey Drizzle after roasting.
  • 1/3 cup crumbled feta cheese Sprinkle on top after roasting.
  • 1 tablespoon chopped fresh parsley or mint For garnish.
  • to taste Salt and pepper For seasoning.

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash, peel, and slice the sweet potatoes into 1/2-inch rounds.
  • Arrange the rounds in a single layer on the baking sheet.
  • Drizzle with olive oil or butter and season with salt and pepper. Flip to coat both sides.

Cooking

  • Roast for 20 minutes, flip each round, and roast an additional 10-15 minutes until edges are browned.
  • Remove from oven and immediately drizzle with honey.
  • Sprinkle crumbled feta over the rounds.
  • Garnish with chopped parsley or mint and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For freezing, lay them out on a baking sheet to freeze individually before transferring to a freezer bag. Reheat in the oven to maintain crispiness.
