Ingredients
  

  • 4 medium sweet potatoes (peeled and cubed)
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter (melted)
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 400°F (200°C). Grease or line a baking sheet with parchment paper. Peel and cube sweet potatoes into bite-sized pieces.
  • In a large bowl, whisk together melted butter, honey, cinnamon, olive oil, and salt. Toss sweet potatoes until evenly coated.
  • Spread sweet potatoes on the baking sheet in a single layer. Roast for 20–25 minutes until golden brown and tender, tossing once halfway through.

Notes

Prep the sweet potatoes up to 24 hours in advance or roast them ahead and refrigerate for 3 days. To get them extra crispy, avoid overcrowding the pan and use a good-quality olive oil. Variations include adding nuts, switching honey for maple syrup, or turning savory with garlic and herbs.
