Ingredients
  

  • 2 cups plain yogurt full-fat recommended
  • 1/4 cup cold water adjust for thickness
  • 2-3 tbsp sugar or honey/maple syrup
  • 1-2 tbsp rose syrup or 1-2 tsp rose water + extra sugar
  • 1 tsp dried rose petals plus extra for garnish
  • 1/4 tsp cardamom powder optional
  • Pinch of saffron strands optional
  • Ice cubes for serving

Instructions
 

  • Add yogurt, cold water, sugar, and rose syrup to a blender. Blend for 30 seconds until smooth and frothy.
  • Add cardamom powder and half of the rose petals. Pulse a few times to mix, but don't blend fully.
  • Taste and adjust – more rose flavor? Add more syrup. Not sweet enough? Add more sugar. Too thick? Add more water.
  • Pour into glasses. You should see a frothy layer on top.
  • Garnish with remaining rose petals and saffron strands (if using).
  • Serve immediately with ice cubes or chill in the fridge for 30 minutes for a colder drink.
  • Note: Don’t over-blend. 30-45 seconds is ideal for the perfect texture.

Notes

Rose lassi is best enjoyed fresh, but can be kept in the fridge for up to 24 hours.
If you don’t have rose syrup, use rose water + extra sugar for a similar flavor.
For vegan lassi, substitute yogurt with coconut yogurt.
Customize with variations like Mango Rose Lassi, Saffron Rose Lassi, or Nutty Rose Lassi.
