  • 8 oz fresh or frozen cheese tortellini
  • 4 oz thinly sliced salami, chopped
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls

For the dressing

  • 3 tbsp extra virgin olive oil Use high-quality for rich flavor
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Preparation

  • Cook the tortellini in salted boiling water according to package directions until al dente (about 3–5 minutes). Drain and set aside.
  • In a large bowl, combine the cooked tortellini, chopped salami, halved cherry tomatoes, and mozzarella balls.
  • In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper. Drizzle over the salad mixture.
  • Toss gently to combine all ingredients. Cover and refrigerate for at least 30 minutes before serving.

Notes

This salad is versatile and can be enjoyed as a standalone dish or as a side. It's great for potlucks and family gatherings. To store, keep in an airtight container in the fridge for up to three days.
