Salted Caramel Cookies

Ingredients
  

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated white sugar
  • 3/4 cup light brown sugar, packed
  • 1 large egg , room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all -purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup caramel bits or chopped soft caramels
  • 1 teaspoon flaky sea salt, for garnish

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, beating until well combined.
  • In a separate bowl, whisk together flour, baking soda, and fine sea salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the caramel bits using a spatula.
  • Scoop rounded tablespoons of dough onto the prepared baking sheets, spaced 2 inches apart.
  • Bake for 10 to 12 minutes or until edges are lightly golden.
  • Remove from oven and immediately sprinkle each cookie with a pinch of flaky sea salt.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
