  • 2 cups all-purpose flour
  • 1 cup warm water Use warm water, not hot, to activate the yeast.
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • Fresh herbs (like rosemary or thyme) For flavoring.
  • Coarse sea salt For topping.

Preparation

  • In a large mixing bowl, combine warm water, yeast, and olive oil. Stir gently and let it sit for about 5 minutes.
  • Add flour and salt to the mixture and stir until a rough dough forms.
  • Knead the dough on a floured surface for about 5 minutes until smooth.
  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 30 minutes.

Baking

  • Preheat your oven to 425°F (220°C).
  • Spread the dough onto a greased baking sheet, pressing it out into a rectangle.
  • Use your fingers to create dimples in the surface of the dough.
  • Drizzle with olive oil, sprinkle with coarse sea salt and fresh herbs.
  • Bake for 20-25 minutes or until golden brown.
  • Let it cool slightly before slicing and serving.

Notes

Focaccia is versatile and can be served with soups, salads, or dips. Store leftovers in an airtight container at room temperature for up to two days, or freeze for a month.
