Ingredients
  

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • A pinch of salt

Caramel Layer:

  • 1 can 14 oz sweetened condensed milk
  • 1/2 cup dark brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Topping:

  • 1 1/2 cups shredded coconut
  • 1/2 cup toasted coconut flakes
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions
 

  • Preheat the oven to 350°F (175°C).

For the Crust:

  • Crush graham crackers into fine crumbs.
  • Mix the crumbs with melted butter, sugar, and salt.
  • Press the mixture into the bottom of the pie dish.
  • Bake for 10-12 minutes. Let cool.

For the Caramel Layer:

  • In a saucepan, combine sweetened condensed milk, dark brown sugar, butter, and vanilla extract.
  • Heat over medium-low, stirring constantly, until the mixture thickens and turns golden amber.
  • Pour over the cooled crust and smooth it evenly.

For the Coconut Topping:

  • Toast shredded coconut in a pan or oven until golden brown.
  • Sprinkle toasted coconut over the caramel layer.

For the Chocolate Drizzle:

  • Melt chocolate chips with heavy cream in a double boiler or microwave.
  • Drizzle over the pie once it has cooled completely.
  • Refrigerate for at least 2 hours before serving.
  • Slice and enjoy!

Notes

Make sure the caramel doesn't overcook, as it can burn easily.
Store the pie in the fridge for up to 4-5 days.
For gluten-free, substitute with gluten-free graham crackers.
