Ingredients
  

For the Macaron Shells

  • 100 grams Domino® Golden Sugar
  • 4 grams egg white powder (optional) Optional for better texture
  • 100 grams egg whites Ensure they are at room temperature
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 1 1/2 cups Domino® Powdered Sugar (187 grams) Used for icing
  • 1 tbsp meringue powder
  • 4 tbsp water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring

For the Buttercream Filling

  • 1/2 cup unsalted butter (113 grams) Softened
  • 1/4 cup Domino® Golden Sugar (50 grams)
  • 1 1/4 cups Domino® Powdered Sugar (156 grams)
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1/2 tbsp milk or heavy cream
  • 1/4 cup desiccated coconut (shredded (50 grams))

Instructions
 

Make the Macaron Shells

  • Begin by preparing the macaron mixture. Combine the almond flour, powdered sugar, and optional egg white powder.
  • Whip the egg whites until stiff peaks form, then fold in the dry mix.

Prepare the Royal Icing

  • Combine meringue powder with water until smooth.
  • Add food coloring to create a fun look for Santa.

Prepare Sugar Cookie Buttercream

  • Mix softened butter and sugar.
  • Whip in vanilla and almond extracts along with milk or cream.

Decorate the Shells

  • Using the royal icing, pipe on cheerful designs such as Santa’s hat or face.

Fill the Shells

  • Once the decorated shells have dried, spread or pipe the buttercream between pairs of shells.
  • Sandwich them together.

Notes

Let your macarons rest before baking to create a lovely crisp shell. Also, keep in mind that using a kitchen scale for accurate measurements helps achieve better results.
