Ingredients
  

  • 16 ounces smoked sausage, sliced into 1/2-inch rounds
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/4 cup hone y
  • 3 cloves garlic , minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1 tablespoon fresh parsley, finely chopped

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a high-rimmed baking sheet with parchment paper or silicone mat.
  • In a small mixing bowl, whisk together the honey, olive oil, minced garlic, soy sauce, salt, black pepper, and dried oregano until emulsified.
  • Place the sliced sausage and cubed sweet potatoes on the baking sheet.
  • Pour the honey garlic mixture over the ingredients and toss using tongs or clean hands until every piece is evenly coated.
  • Spread the ingredients into a single layer, ensuring no overlapping to allow for proper caramelization.
  • Place the baking sheet in the center of the oven and roast for 25 minutes, pausing halfway through to toss the ingredients for even browning.
  • Verify that the sweet potatoes are fork-tender and the sausage is lightly browned before removing from the oven.
  • Garnish with fresh chopped parsley and serve immediately.
