  • 4 large tortillas You can use whole wheat tortillas for a healthier option.
  • 4 links breakfast sausage Feel free to swap for turkey or vegetarian sausage.
  • 4 large eggs Scrambled to your desired consistency.
  • 1 cup shredded cheese (cheddar or your favorite) Add more cheese or try a different variety if you like it cheesy.

Cooking

  • In a skillet, cook sausage links until browned and fully cooked. Set aside.
  • In the same skillet, scramble the eggs to your desired consistency.
  • Place a sausage link, some scrambled eggs, and shredded cheese in the center of each tortilla.
  • Roll up the tortillas tightly and return them to the skillet seam-side down.
  • Lightly toast until golden brown and heated through.
  • Enjoy immediately or wrap in foil for an on-the-go breakfast!

Notes

These roll-ups are ideal for breakfast on the run. Serve with fresh fruit or yogurt, and top with salsa or avocado for more flavor. Leftovers can be stored in an airtight container for about 3 days, or frozen for up to a month.
