Sausage fried rice is a quick and versatile dinner option, perfect for weeknights. This dish takes just 15-20 minutes to prepare and is ideal for using leftover rice and various sausage types like Italian, Chinese preserved pork (lap cheong), and Chinese preserved liver sausage (yun cheong). It's a customizable recipe that can be enhanced with your favorite vegetables, making it a family-friendly meal.

Ingredients
  

  • 3 cups cooked long grain rice preferably day-old
  • 2 beaten eggs
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 2-3 Chinese preserved sausages lap cheong, sliced
  • 2 cloves garlic minced
  • 2 shallots finely chopped
  • 3 green onions chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon ketchup optional
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 1/4 teaspoon MSG optional

Instructions
 

Prepare the Rice:

  • If using fresh rice, spread it on a sheet pan and chill it in the freezer for 15 minutes. Break up any clumps in a mixing bowl.

Cook the Sausage:

  • Heat a wok over high heat. Add sliced sausages and stir-fry until they release their fat and are slightly browned.

Add Aromatics:

  • Add garlic, shallots, and green onions to the wok. Sauté until fragrant.

Cook the Eggs:

  • Push the sausage and aromatics to one side. Add beaten eggs to the empty space. Scramble them until fully cooked, then mix everything together.

Stir-Fry Vegetables:

  • Add mixed vegetables and stir-fry for 2-3 minutes until tender but crisp.

Add Rice & Seasonings:

  • Add the chilled rice, breaking up any clumps. Pour in soy sauce, dark soy sauce, oyster sauce, sesame oil, and ketchup. Stir-fry until everything is well combined and heated through.

Final Touch:

  • Taste and adjust seasoning if needed. Optionally, sprinkle MSG for extra umami.

Serve:

  • Garnish with extra chopped green onions and serve hot.
