Savory Baked Cheese and Garlic Chicken Wraps

Ingredients
  

Chicken and Filling

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 cup fresh baby spinach, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Wrapping and Baking

  • 4 large tortillas or wraps

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with olive oil or cooking spray.
  • In a bowl, combine the shredded mozzarella cheese, grated Parmesan cheese, minced garlic, onion powder, smoked paprika, dried oregano, dried basil, salt, and pepper. Mix well to create the filling.
  • Take each chicken breast and using a sharp knife, create a pocket by slicing through the thick side of each breast, ensuring not to cut all the way through.
  • Stuff each chicken breast pocket with the cheese and herb mixture, and if desired, add the chopped baby spinach for extra nutrition and flavor.

Assembly and Baking

  • Once the chicken breasts are stuffed, wrap each one tightly in a tortilla or wrap, securing with toothpicks if necessary.
  • Place the wrapped chicken breasts seam-side down in the prepared baking dish. Drizzle a small amount of olive oil over the top and sprinkle with additional herbs if desired.
  • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serving

  • Once cooked, remove from the oven and let the wraps rest for a few minutes before slicing into them. Serve warm garnished with fresh herbs, if desired.

Notes

To keep leftovers fresh, let the wraps cool completely before storing them. Place them in an airtight container in the fridge for up to 3 days. You can also freeze them for later.
