  • 1 can enchilada sauce

  • 1 can black beans, rinsed and drained Can substitute with kidney beans or pinto beans.
  • 1 cup corn, frozen or canned
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder Adjust quantity for spice preference.
  • 1 tsp cumin
  • to taste Salt and pepper

Toppings

Preparation

  • In a large pot, sauté the onion and garlic until softened.

Notes
