Ingredients
  

For the filling

  • 1 package Puff Pastry (use homemade if preferred)
  • 2 tbsp Unsalted Butter adds richness and flavor
  • 1 tbsp Olive Oil for sautéing
  • 1 medium Yellow Onion or red onion for sharper taste
  • 2 cloves Garlic minced
  • 8 oz Cremini Mushrooms or shiitake/button mushrooms
  • 1 tbsp Fresh Thyme or dried thyme, use half
  • Salt to taste, essential for seasoning
  • Black Pepper to taste, essential for seasoning
  • 1/2 cup Dry White Wine optional, can substitute with vegetable broth
  • 8 oz Cream Cheese can substitute with ricotta or goat cheese
  • 1/2 cup Parmesan Cheese or Pecorino Romano
  • 1 cup Gruyère Cheese or Swiss/Fontina
  • 1 tbsp Dijon Mustard optional

For assembly

  • 1 large Egg can be replaced with cream or milk
  • 2 tbsp Fresh Parsley chopped

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a pan, heat olive oil and butter. Sauté onions and garlic until soft.
  • Add mushrooms, thyme, and season with salt and pepper. Cook until mushrooms are tender.
  • Stir in white wine (or broth) and cook until the liquid evaporates. Let it cool.
  • In a bowl, mix cream cheese, Parmesan, Gruyère, and mustard.
  • Add cooled mushroom mixture and parsley to the cheese mix.
  • Roll out puff pastry into a rectangle. Cut strips along the sides.
  • Place filling in the center and fold the strips over, creating a braid.
  • Brush with beaten egg and bake for 25-30 minutes until golden.

Notes

This delicious braid is perfect on its own but can also be served with a fresh salad or light soup. Pair it with a crisp white wine for a special touch.
