Ingredients
  

  • 1 lb large shrimp 31/40 size, cooked
  • ½ cup mayonnaise
  • 2-3 tablespoons Old Bay seasoning
  • 3 stalks celery diced
  • ½ red onion diced
  • 4-5 tablespoons lemon juice
  • cup fresh dill chopped
  • ½ cup fresh parsley chopped
  • 2 teaspoons Dijon mustard

Instructions
 

Prepare Shrimp:

  • Bring a medium pot of water to a boil. Add shrimp and cook for 2-3 minutes until they turn pink and opaque. Immediately transfer to an ice bath to cool.

Make Dressing:

  • In a large mixing bowl, whisk together mayonnaise, Dijon mustard, Old Bay seasoning, and lemon juice until smooth.

Combine Ingredients:

  • Gently fold the cooled shrimp into the dressing. Add diced celery, red onion, fresh dill, and parsley. Mix until all ingredients are well combined.

Chill:

  • Refrigerate the shrimp salad for at least 30 minutes to allow flavors to meld.

Serve:

  • Serve on crisp romaine lettuce or croissants, or with crackers.
