  • 8 ounces elbow macaroni You can substitute with shells or penne pasta.
  • 2 tablespoons butter Olive oil can be used as a substitute.
  • 2 tablespoons all-purpose flour Used to thicken the sauce.
  • 2 cups milk Low-fat milk or a dairy-free alternative can be used.
  • 8 ounces Boursin cheese Any flavor can be used for variations.
  • Salt and pepper to taste Adjust according to preference.

Optional Topping

  • 1 cup breadcrumbs For a crispy topping.

Preparation

  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute.
  • Gradually whisk in the milk, cooking until the mixture thickens.
  • Add the Boursin cheese, stirring until melted and smooth.
  • Combine the cheese sauce with the cooked macaroni, mixing well.
  • Season with salt and pepper to taste.

Baking (Optional)

  • If desired, pour the mixture into a baking dish, top with breadcrumbs, and bake at 350°F (175°C) for 15-20 minutes.
  • Serve warm.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For freezing, place in a freezer-friendly dish for up to 2-3 months. Reheat gently, adding a splash of milk if needed.
