  • 4 pieces chicken breasts
  • 2 cups sliced mushrooms Use your favorite mushrooms like cremini or button.
  • 1 cup white wine A dry white wine works best; avoid sweet varieties.
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste Reduce salt if using packaged chicken broth.
  • Fresh parsley for garnish

  • Heat the olive oil and butter in a skillet over medium heat.
  • Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the garlic and sliced mushrooms. Sauté until the mushrooms are tender.
  • Pour in the white wine and bring to a simmer, scraping up any bits from the bottom of the skillet. Cook for about 5 minutes to reduce slightly.
  • Return the chicken to the skillet and spoon the sauce over the top. Cook for an additional 2-3 minutes to heat the chicken through.
  • Garnish with fresh parsley before serving.

Notes

You can store leftovers in an airtight container in the fridge for up to three days. For freezing, use freezer-safe containers. Reheat gently to keep the chicken tender.
