Skinny Baked Cauliflower Tots

Ingredients
  

  • 2 cups cauliflower florets, riced
  • 1 large eg g
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 cup finely chopped yellow onion
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon sal t
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400°F (200°C) and grease a baking sheet or line with parchment paper.
  • Steam the riced cauliflower for 5 minutes, then transfer to a clean dish towel and squeeze out as much liquid as possible to ensure a crisp texture.
  • In a large mixing bowl, combine the drained cauliflower, egg, cheese, breadcrumbs, onion, parsley, salt, and pepper.
  • Form approximately 1 tablespoon of the mixture into a small cylinder and place on the baking sheet.
  • Repeat with the remaining mixture, spacing tots 1 inch apart.
  • Bake for 20 minutes, flipping halfway through, until the exterior is golden brown and firm.
