Ingredients
  

For the Chicken Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 3 cloves garlic, minced
  • Salt and pepper to taste

For Cooking

  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups water
  • Fresh herbs for garnish (optional)

Preparation

  • In a slow cooker, combine lemon juice, olive oil, oregano, thyme, garlic, salt, and pepper.
  • Add chicken breasts and coat them with the marinade.
  • Pour chicken broth over the chicken.

Cooking

  • Cover and cook on low for 4-6 hours or until chicken is cooked through.
  • About 30 minutes before serving, add rice and water to the slow cooker.
  • Stir gently, cover, and let cook until the rice is fluffy and has absorbed the liquid.
  • Garnish with fresh herbs if desired before serving.

Notes

Make sure to season the chicken well for the best flavor. Use fresh herbs if you have them on hand for a boost in taste. Check the chicken towards the end of cooking for doneness. If you like things spicy, add red pepper flakes to the marinade. Adjust the liquid based on your rice brand's cooking instructions.
