Ingredients
  

  • 2 lbs carrots, peeled and cut into chunks
  • 1/3 cup pure maple syrup
  • 1/4 cup light brown sugar
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

  • Peel and chop the carrots into bite-sized chunks. Place them in the slow cooker.
  • In a bowl, whisk together maple syrup, brown sugar, melted butter, cinnamon, salt, and pepper. Pour over the carrots and stir to coat.
  • Cover and cook on LOW for 3–4 hours, or until the carrots are tender and glazed.
  • Transfer to a serving dish, garnish with parsley, and serve warm.

Notes

Make ahead: Cook and refrigerate for up to 3 days, then reheat before serving. Freeze for up to 3 months. For variations, try honey instead of maple syrup, add nutmeg or cloves for warmth, or swap in parsnips or sweet potatoes. Garnish with fresh parsley, green onions, or toasted sesame seeds for extra flavor.
