Preparation

  • Preheat oven to 400°F (200°C).
  • Peel and cube the sweet potatoes.
  • Boil sweet potatoes until tender, then drain.
  • Smash the sweet potatoes gently and place them on a baking sheet.

Cooking

  • Drizzle with olive oil, maple syrup, chili paste, salt, and pepper.
  • Roast in the oven for about 25-30 minutes until crispy.
  • Remove from oven and sprinkle with sesame seeds and fresh herbs before serving.

Notes

These smashed sweet potatoes pair beautifully with grilled chicken or steak. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) until heated through.
