Ingredients
  

  • 2 lbs ground beef 80/20 fat-to-lean ratio
  • 1 lb ground pork
  • 8 slices bacon chopped and cooked
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 medium onion diced
  • 1 tbsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp black pepper

Glaze:

  • 1 cup ketchup
  • 1.5 tbsp honey
  • 1.5 tbsp brown sugar
  • Pinch of cayenne pepper

Instructions
 

Prepare the Meat Mixture:

  • In a mixing bowl, gently combine ground beef, ground pork, bacon, eggs, breadcrumbs, onion, garlic powder, Worcestershire sauce, salt, and black pepper. Do not overmix to avoid tough texture.

Form the Loaf:

  • Shape the mixture into a 1.5-inch thick loaf. Avoid pressing the meat too firmly.

Preheat the Smoker:

  • Heat the smoker to 225°F. Place a grill topper or vented tray in the smoker for even smoke circulation.

Smoke the Meatloaf:

  • Place the meatloaf on the tray and smoke for 2 hours.

Apply the Glaze:

  • Brush the meatloaf with the prepared glaze. Continue smoking for another 2 hours or until the internal temperature reaches 160°F.

Rest and Serve:

  • Remove the meatloaf from the smoker and let it rest for 5-10 minutes. Slice and serve with your favorite sides.
