Smoked Queso Dip

Smoked queso dip is a creamy, smoky cheese dip that’s perfect for game days, BBQs, and holiday gatherings. Made with Velveeta, cheddar or pepper jack cheese, Rotel, meat, and jalapeños, this dip is easy to prepare and customizable for any occasion.

Equipment

  • Smoker, grill, or slow cooker
  • Cast iron skillet or aluminum pan
  • Wood chips (hickory, mesquite, or fruitwood)
  • Smoker box (if using a gas grill)

Ingredients
  

  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 ½ lbs Velveeta cheese cubed
  • 1/3 cup finely chopped onion
  • 2-3 cloves garlic minced
  • 1 15.5 oz can fire-roasted tomatoes
  • 1 4 oz can green chilies
  • 1 lb cooked sausage chorizo, or ground beef
  • 1 ¼ cup milk
  • ½ cup half and half
  • ¼ cup chopped cilantro
  • ½ tsp cumin
  • ¼ tsp chili powder
  • Salt and pepper to taste

Instructions
 

  • Preheat your smoker or grill to 225-250°F.
  • In a cast iron skillet or disposable aluminum pan, combine all the ingredients.
  • Place the pan on the smoker or grill, ensuring it’s on the indirect heat side. Close the lid.
  • Stir the mixture every 15-20 minutes to ensure even melting and flavor blending.
  • Smoke for 45-60 minutes, or until the cheese is fully melted and creamy.
  • Remove from heat and serve immediately with your choice of chips or veggies.
