Smoked Salmon Cracker Bites

Ingredients
  

  • 12-15 crackers (water crackers, rye crisps, or whole grain)
  • 4 oz smoked salmon, thinly sliced (115 g)
  • 4 oz cream cheese, softened (or goat cheese) (115 g)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp finely chopped dill or chives
  • salt and pepper, to taste
  • optional toppings: capers, cucumber slices, pickled onions, or microgreens

Instructions
 

  • In a small bowl, mix softened cream cheese with lemon juice, zest, dill or chives, salt, and pepper until smooth and fluffy.
  • Lay crackers on a serving platter. Spread a small dollop of the cream cheese mixture on each one.
  • Cut smoked salmon into bite-sized pieces and gently place on top of the cream cheese. Let it have some height.
  • Garnish with dill, capers, cucumber ribbons, or red onion slices. Finish with lemon juice or cracked pepper.
  • Serve immediately, or refrigerate for up to 1 hour before serving. Best when crackers are still crisp.

Notes

These bites are best served fresh to keep the crackers crisp. Prep the cream cheese mixture in advance, but assemble no more than an hour before serving. Garnish right before plating for the prettiest presentation.
