Ingredients
  

For the batter

  • 1 cup unsalted butter, softened Make sure your butter is softened for easy mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour Measure flour correctly to avoid a dense texture.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs Use crunchy graham crackers for added texture.
  • 1 cup chocolate chips You can substitute other types of chocolate.
  • 1 cup mini marshmallows Feel free to add extra for a gooier texture.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, combine the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the creamed mixture.
  • Stir in the graham cracker crumbs, chocolate chips, and mini marshmallows until evenly combined.
  • Spread the mixture into the prepared baking dish evenly.

Baking

  • Bake for 25-30 minutes or until golden brown.
  • Remove from the oven and let cool before cutting into bars.

Notes

These cookie bars are delightful on their own but can be served with a scoop of vanilla ice cream. Store in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
