S'mores Cracker Cookies

Ingredients
  

For the cookies

  • 48 pieces Ritz crackers
  • 7 oz marshmallow crème
  • 24 oz chocolate almond bark Melted for dipping
  • 1 cup graham crackers Crushed for topping
  • to taste marshmallow bits Optional topping
  • to taste mini chocolate chips Optional topping

Instructions
 

Preparation

  • In a microwave-safe bowl, melt the chocolate almond bark in 40-second intervals until completely melted.
  • Place the Ritz crackers on a long sheet of wax paper.
  • Add a small dollop of marshmallow crème to the center of half the crackers and place another cracker on top. Press together gently.
  • Use a fork or candy tongs to dip the cracker sandwich into the melted chocolate, tapping off excess chocolate.
  • Place the dipped cracker back onto wax paper and immediately sprinkle graham cracker crumbles, marshmallow bits, and/or mini chocolate chips on top.
  • Allow the crackers to set on the wax paper until the chocolate rehardens.

Notes

Store in an airtight container for up to 5 to 7 days. You can freeze them for longer storage, just make sure to wrap each cookie carefully.
