Ingredients
  

  • 3-4 pounds Whole turkey wings Split into segments
  • 1.5 tbsp Smoked paprika
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 0.5 tsp Cayenne pepper Adjust to taste
  • Salt
  • Black pepper
  • 2 tbsp Olive oil For browning
  • 2 Bell peppers Sliced
  • 1 Onion Diced
  • 4 cups Chicken broth Use homemade or store-bought
  • 2 tbsp Cornstarch For thickening
  • 1 tbsp Worcestershire sauce Optional browning seasoning
  • 2 tbsp Unsalted butter Adds richness

Instructions
 

  • Prep the Wings: Rinse and pat the turkey wings dry. Trim wing tips and set aside for stock (optional).
  • Season the Wings: Combine Cajun seasoning, seasoned salt, paprika, garlic powder, onion powder, and poultry seasoning. Rub evenly over the wings.
  • Brown the Wings: Heat olive oil in a skillet over medium-high heat. Brown the wings for 3-5 minutes on each side until golden.
  • Prepare the Gravy: In the same skillet, sauté onions and bell peppers until soft. Add butter and stir in flour to create a roux. Slowly pour in the chicken broth, stirring constantly to avoid lumps. Add browning seasoning, salt, and pepper.
  • Bake the Wings: Preheat the oven to 375°F (190°C). Place the wings in the skillet or Dutch oven, pouring the gravy over them. Cover and bake for 1.5 hours, basting with gravy every 30 minutes.
  • Check for Doneness: Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Let the wings rest before serving.
