  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)

Instructions
 

Preparation

  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  • Wrap the dough in plastic wrap and refrigerate for at least 1 hour, allowing it to firm up.

Baking

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to about ¼ inch thickness.
  • Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and allow the cookies to cool on the sheets for a few minutes before transferring them to wire racks to cool completely.

Decoration

  • Once cooled, decorate the cookies as desired with icing, frosting, and sprinkles.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze unbaked dough for up to three months.
