- 2 tablespoons Bacon fat or butter
- 2 tablespoons All-purpose flour
- 14.5 ounces Canned whole peeled tomatoes or fresh beefsteak tomatoes
- 1 cup Chicken broth or stock
- To taste Salt and pepper
- 1 teaspoon optional Sugar
- 1-2 sprigs Herbs thyme, rosemary, parsley
Cook bacon in a skillet until crisp (8-10 minutes). Reserve 2 tablespoons of bacon drippings.
Add chopped onions (optional) to the bacon fat and sauté until tender and translucent (3-5 minutes).
Whisk in all-purpose flour to create a roux. Cook until golden brown (2-3 minutes).
Slowly whisk in chicken broth, scraping up browned bits from the skillet. Simmer and thicken for 10-15 minutes.
Add canned tomatoes with their juices. Stir well and season with salt and pepper to taste.
Let the gravy simmer for 5 minutes to meld the flavors.
Serve hot over biscuits, mashed potatoes, or grits.
