Ingredients
  

  • 2 tablespoons Bacon fat or butter
  • 2 tablespoons All-purpose flour
  • 14.5 ounces Canned whole peeled tomatoes or fresh beefsteak tomatoes
  • 1 cup Chicken broth or stock
  • To taste Salt and pepper
  • 1 teaspoon optional Sugar
  • 1-2 sprigs Herbs thyme, rosemary, parsley

Instructions
 

  • Cook bacon in a skillet until crisp (8-10 minutes). Reserve 2 tablespoons of bacon drippings.
  • Add chopped onions (optional) to the bacon fat and sauté until tender and translucent (3-5 minutes).
  • Whisk in all-purpose flour to create a roux. Cook until golden brown (2-3 minutes).
  • Slowly whisk in chicken broth, scraping up browned bits from the skillet. Simmer and thicken for 10-15 minutes.
  • Add canned tomatoes with their juices. Stir well and season with salt and pepper to taste.
  • Let the gravy simmer for 5 minutes to meld the flavors.
  • Serve hot over biscuits, mashed potatoes, or grits.
